Curry Pumpkin Soup with Sausage and Kale – Gluten and Dairy Free
Well, Hurricane Florence is in town for the weekend so I wanted to make something hearty that we could eat on for a few days while we are hunkered down and the wind is gusting outside. At first, I was just going to do this soup sans sausage but decided at the last minute to add the sausage and I’m glad I did! I made this recipe in my Instant Pot but you could easily do it in the slow-cooker or stovetop as well.
First, I set my Instant Pot on Saute and put in a tablespoon of coconut oil cooked my ground pork until no pink was left. The Instant Pot makes it really easy to saute meat – I’ve done ground beef, pork, and chicken and I’ve never had it burn.
Next, I added in all the ingredients except for the pumpkin seeds which I was using for garnish. I set my Instant Pot for 10 minutes and walked away. You could also cook this on high heat for 3-4 hours or low for 7-8 hours in a slow cooker. Likewise, you could also let this simmer on the stove for 30 mins-1 hour.
When the timer went off, I did a natural release for 10 minutes.

1 TBSP Coconut Oil
4 Cups Chicken Bone Broth
1 Cup White Onion
1 Cup Coconut Milk
1 LB Ground Pork
1 Can (15oz) Pumpkin Puree
2 Cups Chopped Kale
1 tsp Curry Powder
1 Clove Minced Garlic
1 tsp Turmeric
1 tsp Grated Fresh Ginger
1/2 tsp Salt
Directions
- Place 1 TBSP coconut oil in the Instant Pot and place Instant Pot on “Saute” function and brown ground pork.
- Put all ingredients, except pumpkin seeds, in the Instant Pot and stir.
- Place the lid on the Instant Pot lock it. Make sure the vent is closed.
- Touch the Pressure Cook button and set the time for 10 minutes.
- When cooking is complete, natural release for 10 minutes.
- Garnish with pumpkin seeds if desired.
Notes
- In the slow-cooker, brown ground pork on stovetop. Place all ingredients in the slow-cooker, except pumpkin seeds, and cook on high for 3-4 hours or low for 7-8 hours.
- Alternatively, on the stovetop, brown ground pork. Place all ingredients into a large stovetop pot and bring to boil. Once boiling, turn stove down to simmer and let simmer for one hour.
